Chocolate Mousse by Olmsted

Method

Melt together the chocolate and butter, then let cool. Whisk egg yolks with half of the sugar. Whisk whites to stiff peaks with salt and cream of tartar, adding sugar when whipped halfway. Fold together in three stages. Put in individual cups and refrigerate until use. Top with vanilla crème fraîche (or substitute with whipped cream) before serving.

Combine crème fraîche, milk, and sugar. Scrape the vanilla bean pod seeds into the mixture and add the pod as well. Place over low heat until warm, then let steep. Cool mixture then add to ISI canister and charge with nitrous cartridge. Serve alongside or on top of chocolate mousse.

cHOCOLATE MOUSSE

35 oz chocolate

30 egg yolks

30 egg whites

1/2 lb butter

2 cups sugar, divided in half

1 pinch cream of tartar

Salt to taste

VANILLA CRÈME FRAÎCHE

300 ml crème fraîche

200 ml milk

3/4 cup sugar

1 pod, vanilla bean

Primary Bathroom

Step into the primary bathroom, a serene blend of Danish simplicity and Californian modernism. The room is bathed in an elevated yet neutral palette, creating a calming atmosphere. A standout feature is the dramatic arch leading to the shower, complete with brass fixtures, a sumptuous rain shower, a useful hand shower, and a convenient niche for bathing essentials. The shower is finished in a combination of handmade Moroccan zellige tile in weathered white, plaster, and statement Calacatta Viola stone known for its dramatic deep purple veins. The sink area is a masterpiece, boasting a pair of seamless mirrored cabinets with storage, a Turkish hand-carved Calacatta Viola marble double-wide sink, a pair of contemporary wall-mounted brass faucets, and a handcrafted ribbed oak cabinet.

Secondary Bathroom

In the secondary bathroom, organic finishes and an earthy color palette, comprised of whites, sands, and browns, radiate warmth. The space features a sophisticated sink area, including an arched brass mirror cabinet, a hand-carved Turkish Calacatta Monet marble sink with a wall-mounted brass faucet, and a locally handcrafted oak sink cabinet offering storage and hidden ambient light below. Beneath, handmade terrazzo floors in mousse, and above, handcrafted brass and ceramic light fixtures add a poetic touch. Beyond, the tub area is framed by handmade Moroccan Zellige tile in sand and a dramatic arched glass shower screen. The controls are conveniently placed to avoid getting drenched while preparing a bath or shower.

Honey and Milk Bath

Method

Boil water and add honey. Mix well until the honey has dissolved completely. Add milk to this mix and stir. Carefully transfer the mixture to a ceramic pitcher.

Draw a warm bath and add baking soda and salt to the running water. Carefully add the hot milk, honey and water mixture.

Make sure the water temperature is comfortable and safe before stepping in.

3 tbsp baking soda

3/4 bath warm water
